independent.ie– There hasn’t been a lot of good news for the industry of late, so it was with particular joy that I headed to Mountjoy Square for not only the reopening of Ross Lewis’s iconic Chapter One but its relaunch as Chapter One by Mickael Viljanen.

Lewis, after almost 30 years, has stepped back from the kitchen, passing that particular baton to Viljanen, who achieved two Michelin stars at The GreenHouse.

There wasn’t any ‘beef or salmon’ on this first night but there was a palpable air of excitement among the team, led by GM Danny Desmond. What I love about Chapter One is the feeling of friendly formality, and you just can’t put a price on the Dub sense of humour — one waiter quipped, while moving the drinks trolley past us, “Duty-free?”
