independent.ie– In spite of all the anguish of the past couple of years, or maybe because of it, the number of hip new, casual restaurants, cafés and food stores opening around the country is quite extraordinary.

In some cases, vibrant young chefs, having lost their jobs, didn’t want to sit around on the Pup payment, but instead saw the opportunity to have a go themselves.

Others, who were at the top of their game but working very long hours, have reassessed their pace of life and decided to make a major career change. Whatever the reasons, the new blood is running hot right now and there are lots of great new spots all over the country to check out — so hit the road.
